For the days when you just need a “healthy treat”… I wanted my turtles but didn’t want to spend the time in the kitchen making them. So using the same ingredients I threw them together in the fastest way I possibly could! Waiting for them to set was torture, haha, but well worth it 🙂

Ingredients
Base
- ½ cup pecans
- ½ cup pitted dates
Filling
- ½ cup pitted dates
- 2 Tbsp maple syrup
- 1 Tbsp coconut butter (or coconut oil)
- ½ tsp vanilla extract
- pinch sea salt
Topping
- 2 Tbsp coconut butter (or coconut oil)
- 2 Tbsp maple syrup
- ¼ cup raw cacao powder
Directions
- In a food processor, process the base ingredients (dates and pecans) until finely ground. Mixture should stick together easily. Pat this mixture down into a 8×5 loaf pan that is lined with parchment paper. (Note, you could double the recipe and use a 9×9 baking dish… but then you’d have a lot of sweet treats hanging around the house 😉
- In the emptied food processor, process the filling ingredients (dates, syrup, coconut butter, vanilla and sea salt) until smooth and creamy. You’ll likely have to stop the processor multiple times and scrape the sides down. Spread the filling over top of the base.
- In a small saucepan, whisk together the topping ingredients (coconut butter, syrup and cacao) just until smooth and creamy. Pour and spread the chocolate over the filling.
- Freeze for at least a half hour before cutting. Keep stored in fridge (or freezer).
