Most treats are high in carbs and/or sugar… And what I see most often are cases where a runner is actually needing more healthy fats in their diet.
Therefore, to round out a meal with some ‘dessert’ at the end, or even as a snack, these fat bombs can prove quite useful. They are both a tasty treat and at the same time providing the exact nutrient of which more is required.
Makes 12.
Ingredients – matcha layer
- 2 Tbsp coconut oil, melted
- ¼ cup coconut butter, softened or melted
- 2 tsp matcha green tea powder
- 1-2 tsp maple syrup (to taste)
- 2 Tbsp tahini
- ¼ cup shredded coconut (optional)
Ingredients – chocolate layer
- ¼ cup coconut oil, melted
- ¼ cup raw cacao powder
- ¼ almond butter
- 1-2 tsp maple syrup (to taste)
Directions
- In a medium bowl, whisk together the oil and softened or melted coconut butter with the matcha powder and maple syrup, then stir in the tahini and optional shredded coconut. Divide this matcha mixture between 12 mini muffin cups.
- In the now emptied bowl, mix together the top layer ingredients, and spoon the chocolate mixture over top of the matcha mixture in the mini muffin cups.
- Place in the fridge until set (about an hour); keep stored in fridge or freezer.
