Toast toppers are all the current rage, and I knew I wanted to add this one to the mix. Although I rarely eat toast, this is definitely the way I’d ever want to do so, by topping each slice with a thick creamy layer of beet walnut hemp spread! You might also dip crackers into this mix, or even use as a dip for veggie sticks.
- ½ cup walnuts
- ¼ cup hemp hearts
- 9 mini pickled beets or 3 small boiled beets (~90g)
- 2 tsp olive oil
- 1 tsp lemon juice
- ¼ tsp sea salt
- Place the walnuts and hemp hearts in a food processor. Process until finely ground.
- Add beets, olive oil, lemon juice and sea salt. Process until fully combined and smooth.
- Store in fridge up to a week.
