Originally developed for during fat-loading in prep for a race, these ‘fat bombs’ have been an ongoing experiment for the past year – a perfect LCHF (low carb, high fat) snack for all those times you are NOT just headed out the door for a run and therefore don’t need a high carb snack! Of course you could add way more sweetener to them and then they’re both high fat and high carb… Which is of course super tasty but probably isn’t a combo you want to indulge in too often 😉
Makes 12.
Ingredients – bottom layer
- 2 Tbsp coconut oil, melted
- ¼ cup almond butter
- ¼ cup shredded coconut
- ¼ cup hemp hearts
- ¼ cup chia seeds
Ingredients – top layer
- 2 Tbsp coconut oil, melted
- ¼ cup raw cacao powder
- ¼ cup raw cacao nibs
- 1 Tbsp maple syrup
Directions
- In a medium bowl, mix together bottom layer ingredients. Divide the mixture between 12 mini muffin cups.
- In the now emptied bowl, mix together the top layer ingredients, and spoon it over the top of the almond butter mixture in the mini muffin cups.
- Place in the fridge until set (about an hour); keep stored in fridge (or freezer).
